For maximum freshness, our half shell scallops are harvested and frozen at the source. We also ensure there is minimal water infusion which gives a quicker way to thaw. During the thawing process, excessive water may ruin the natural flavor and texture of the scallop meat. Hence, our half shell scallops, with its minimal water infusion process, will keep the scallops delicious and fresh.
